Ingredients
- 2 chicken breast
- 1 spaghetti squash
- 2 chicken buoulon cubes
- 1 1/2 cup of water
- 2 lemons
- Small pack of scallions
- Small pack of mint leaves
- 1 can of canelli beans
- Salt and pepper to taste
Steps
- Using a spiral over, create spirals of yellow spaghetti squash (set aside)
- Take out chicken and sprinkle salt and pepper on each side (set aside)
- Add 1 1/2 cup of water to a pan
- Add 2 bullon cubes
- Bring to bowl and reduce heat to medium/low
- Cut 1/2 lemon and add wedges to the chicken broth
- Add spaghetti squash and cook until Aldente
- Add cannelli beans to pan
- Add chicken into the mix and squeeze half a lemon on top
- Cook chicken on either side for 5 minutes (or until cooked)
- Remove from stove
- Garnish with scallions, mint and additional wedges of lemon
