Tricolor Tomato Sauce 

Who needs canned sauce? Ok, sometimes me – but it’s always nice to try the truelly from scratch version of spaghetti sauce!


  • 1 package of tricolor medium tomatoes (4-5 tomatoes)
  • 1 tablespoon salt 
  • Pepper to taste 
  • Whole grain spaghetti
  • Parmesan cheese 
  • 1/4 cup Olive oil
  • 2 cloves Garlic minces


  1. Boil water 
  2. Add tricolor tomatoes and cook until skin begins to peal
  3. Remove tomoatoes from water and peel skin (let tomatoes cook first to avoid burning your fingers)
  4. Crush tomatoes in a bowl with your hands 
  5. Add 1/4 cup olive oil to pan
  6. Set to low heat
  7. Add garlic and cook for 2-3 minutes
  8. Add crushed tomatoes to oil and garlic 
  9. Add salt and pepper
  10. Turn to boil 
  11. Return head to medium low and cool for 20 minutes
  12. Cook pasta until altente and drain
  13. Return pasta to pan and crack one egg into the pasta mixing around pasta until cooked
  14. Add sauce 
  15. Serve and sprinkle with Parmesan cheese
