Udon Noodle Soup


  • 1/4 lb rice or udon noodle
  • 3 cups water 
  • 1 large chicken Boulan cube
  • 1/2 bok choy
  • 1/4 cup mushrooms sliced
  • 1 tbs olive oil
  • 1 purple carrot (shave pieces with pealer)
  • 1 egg
  • Sesame seeds to sprinkle


  1. Boil water in a medium pan (enough to submerge an egg)
  2. Run egg under hot water to bring to room temp
  3. Add egg to water (I use Tongs) and bring to simmer cooking for 3-4 minutes 
  4. Remove egg from water and place in ice bath 
  5. In medium pan, sautée mushrooms in 1 tbs of olive oil until browned 
  6. Remove mushrooms and add carrots, sautéing for 3-4 minutes and set aside
  7. Boil 3 cups of water and add rice or udon noodles cooking for 5 minutes
  8. While noodle cook, remove egg from ice bath and lightly smash against the counter, run under cold water and peel shell away
  9. Add Boulian cube and bok choy to noodles – cook for 2 additional minutes
  10. Add noodles and broth to bowl- place bok choy on side of bowl 
  11. Top with carrots, mushrooms, sesame seeds and sliced egg 
  12. Add salt and pepper to taste
