Bruschetta Salad 


  • 1 cup tricolor grape tomatoes 
  • 1/4 cup burrata 
  • 1/4 cup charred corn 
  • 1/2 avocado 
  • 7 basil leaves
  • 1/4 cup Balsamic 
  • 1 slice Balthazar toast 
  • Salt and pepper to taste 


  1. In medium size pan, heat balsamic to medium/high heat – whisk consistently for 3 minutes until it thickens 
  2. Slice tomatoes and dice avocado – mix into charred corn and sliced burrata
  3. Toast bread and dice into square pieces – add into salad
  4. Rip basil leaves and sprinkle on top
  5. Drizzle with balsamic reduction
  6. Sprinkle salt and pepper to taste 
  7. Add additional basil leaves for decoration
