- 1/2 purple cabbage
- 2 bunches of bean noodles (or clear rice noodles)
- 1/2 lemon or lime
- 1/2 avocado
- Microgreens
Mermaid Toast
- 3 pieces multigrain toast
- 1/2 cup ricotta
- 1 Splenda packet
- 4 drops vanilla extract
- Organic pink and blue food dye
- Edible candy sea creatures / butterfly’s (bought on amazon)
Steps
Unicorn noodles
- Fill medium size pan with water and bring to boil
- Add cabbage and cook for five minutes
- Remove cabbage (keeping water in the pan) and turn off heat
- Add bean noodles to the cabbage soaked water and let absorb for 3 minutes
- Drain noodles and sprinkle with lemon or lime juice to bring through pink color (I partially mix to keep some of the natural purple coloring)
- Add to bowl and sprinkle with micro greens
- Cut avocado in half – using a heart shaped cookie cutter, create avocado hearts (cutting in half to reduce thickness) – add to top of noodles
Mermaid Toast
- Toast bread
- In 2 seperate bowls, seperate ricotta
- Sprinkle each with 1/4 sugar pack of Splenda
- Add 2 drops of vanilla extract to each bowl
- In one bowl, add 1-2 drops of pink food coloring
- In the second bowl, repeat with blue coloring
- Spread across toast (mixing pink and blue) and add decoration ontop
