Chicken Asparagus Pasta 


  • 3 medium tomatoes
  • 1 tsp garlic 
  • 10 thin asaragus
  • 1 thin breast chicken 
  • 1/3 cup flour
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/3 cup mozerella cheese 
  • 1/2 cup olive oil
  • 1 cup spinach 
  • 1/2 package while wheat pasta 
  • 1 tsp salt 


  1. Cover chicken (both sides) in flour
  2. Whisk egg and dip chicken in egg (covering both sides)
  3. Cover both sides of chicken in breadcrumbs
  4. Heat 2 tbs olive oil in pan (medium heat) – cook chicken on each side for 5-7 minutes and chop into small square pieces. Set aside. 
  5. In seperate pan, add water and boil. Add asparagus to boiling water and cook for 7 minutes 
  6. Drain asparagus and chop into 2 inch pieces- using the same pan add 1 tbs olive oil and heat to medium- high tempature. Cook asparagus for 2-3 minutes until crispy. Set aside. 
  7. In large pan, heat 1/3 cup olive oil to medium low heat. Chop tomatoes into 4ths. 
  8. Add minced garlic to pan and cook for 2 minutes, then add tomatoes, 1tsp of salt and cook for 20 minutes 
  9. While tomatoes are cooking, fill a medium pan with water and bring to boil- add pasta 
  10. Cook pasta as directed on package 
  11. In tomatoe pan, add asparagus, chicken and spinach. Stir until spinach is wilted. 
  12. Mix in pasta
  13. Add cheese and mix in until melted
  14. Serve hot!
