Ingredients
- 3 medium tomatoes
- 1 tsp garlic
- 10 thin asaragus
- 1 thin breast chicken
- 1/3 cup flour
- 1/3 cup breadcrumbs
- 1 egg
- 1/3 cup mozerella cheese
- 1/2 cup olive oil
- 1 cup spinach
- 1/2 package while wheat pasta
- 1 tsp salt
Steps
- Cover chicken (both sides) in flour
- Whisk egg and dip chicken in egg (covering both sides)
- Cover both sides of chicken in breadcrumbs
- Heat 2 tbs olive oil in pan (medium heat) – cook chicken on each side for 5-7 minutes and chop into small square pieces. Set aside.
- In seperate pan, add water and boil. Add asparagus to boiling water and cook for 7 minutes
- Drain asparagus and chop into 2 inch pieces- using the same pan add 1 tbs olive oil and heat to medium- high tempature. Cook asparagus for 2-3 minutes until crispy. Set aside.
- In large pan, heat 1/3 cup olive oil to medium low heat. Chop tomatoes into 4ths.
- Add minced garlic to pan and cook for 2 minutes, then add tomatoes, 1tsp of salt and cook for 20 minutes
- While tomatoes are cooking, fill a medium pan with water and bring to boil- add pasta
- Cook pasta as directed on package
- In tomatoe pan, add asparagus, chicken and spinach. Stir until spinach is wilted.
- Mix in pasta
- Add cheese and mix in until melted
- Serve hot!
