Shrimp Spinach Pasta


  • 6 shrimp, cleaned and deveined 
  • 2 cups spinach
  • 1/2 tbs garlic 
  • 6 sundried tomatoe, sliced into thin strips
  • 2 tbs olive oil (from sundried tomato jar) 
  • 2 medium tomatoes 
  • 6 pieces of basil, torn
  • 1/4 lbs angel hair Pasta 


  1. Add oil to pan(from sundried tomato jar) and bring to medium heat
  2. Add garlic and sundried tomato, cook for 1-2 minutes
  3. Add shrimp and cook for 3 minutes
  4. Dice tomatoes and add to pan 
  5. Add spinach and cook until wilted
  6. Set aside 
  7. Boil water and cook angel hair pasta for 2 minutes
  8. Drain and stir into tomato shrimp mixture 
  9. Stir in basil
