Burrito Bowl 


  • 1 1⁄4 lbs pork tenderloin, cut crosswise into 4 pieces
  • 1⁄2 cup barbecue sauce
  • 1 tablespoon cider vinegar
  • 1⁄4 cup water
  • 1/4 cup black beans
  • 1/4 cup charred corn
  • 1 cup arugala 
  • 1/2 avocado 
  • 1 tbs chopped onion
  • 1 tbs diced tomato 
  • 1 tsp lemon juice
  • 1 tsp lime juice 
  • 1/3 cup sour cream 
  • Salt and pepper to taste 


  1. In a covered pot, simmer the pork, barbecue sauce, vinegar, and water until fork-tender, about 20 minutes.
  2. Shred the meat by pulling apart with two forks, and stir into the sauce.
  3. Smash half avocado in a bowl, add onion, diced tomato, lemon and lime juice and salt and pepper to taste 
  4. In a bowl, add arugala, top with pulled pork, guacamole, sour cream, corn, beans 
  5. Sprinkle with salt and pepper and enjoy!
