Ingredients
- 1 1⁄4 lbs pork tenderloin, cut crosswise into 4 pieces
- 1⁄2 cup barbecue sauce
- 1 tablespoon cider vinegar
- 1⁄4 cup water
- 1/4 cup black beans
- 1/4 cup charred corn
- 1 cup arugala
- 1/2 avocado
- 1 tbs chopped onion
- 1 tbs diced tomato
- 1 tsp lemon juice
- 1 tsp lime juice
- 1/3 cup sour cream
- Salt and pepper to taste
Steps
- In a covered pot, simmer the pork, barbecue sauce, vinegar, and water until fork-tender, about 20 minutes.
- Shred the meat by pulling apart with two forks, and stir into the sauce.
- Smash half avocado in a bowl, add onion, diced tomato, lemon and lime juice and salt and pepper to taste
- In a bowl, add arugala, top with pulled pork, guacamole, sour cream, corn, beans
- Sprinkle with salt and pepper and enjoy!
