Shrimp Salad

Super easy lunch recipe!


  • 1 cup arugula
  • 1 small cucumber
  • 5 tricolor tomatoes, cut in half
  • Handful of microgreen
  • 6 large de-vained shrimp
  • 1/4 mozzarella
  • Olive oil and balsamic reduction (can be bought pre-made at most grocery stores) to taste
  • Salt and pepper to taste


  1. Remove shells from shrimp
  2. Add 1 tbs of olive oil to a pan and set to medium low heat – add shrimp and sprinkle with salt and pepper – cook until bright orange (about 5 mins each side)
  3. Add arugula to a bowl- top with tomatoes, shaved cucumber, mozzarella and warm shrimp
  4. Add olive oil and balsamic to taste (I placed dots of balsamic reduction on the cucumber)
  5. Add salt and pepper to taste
  6. Top with microgreens
  7. Enjoy!
