Potato Noodle Pesto

Recipe inspired by loveandlemons sweet potato noodle with garlic and kale.


  • 2 spiralized sweet potatoes, spiralized
  • 1 to 2 tbs olive oil
  • 3 garlic cloves, sliced
  • 2 to 3 tbs water
  • 4 cups baby kale
  • sea salt and freshly ground black pepper
  • squeezes of fresh lemon juice, as desired

serve with:

  • ⅓ cup fresh basil, sliced
  • Spoonful of pesto
  • 2 tablespoons toasted pine nuts
  • grated parmesan cheese


1 Peel sweet potatoes and spiralize

2 Heat the oil in a large deep skillet over medium heat. Add the garlic and cook until golden brown (5 minutes)

3 Add the sweet potato noodles and toss to coat let cook for 2 mins

4 Add 2 to 3 tbs of water and toss again to reduce sticking – add salt and pepper to taste and cook for 5 more mins (avoid cooking until too soft- taste to see if it requires more cooking- there still should be a crunch)

5 During the last minute of cooking, stir in the kale so that it wilts into the noodles- add into a bowl

6 Top with fresh basil, a spoonful of pesto, pine nuts and parmesan cheese
