Mermaid Toast


  • 1/2 cup of light ricotta
  • 1 tsp dragon fruit powder
  • 1 tsp matcha powder
  • 1 tsp vanilla extract (you can use almond too)
  • 1/2 packet Splenda
  • 1 piece of toast
  • 1/2 banana


  • Heart cookie cutter
  • Gold sprinkles


  1. In a bowl, mix ricotta, Splenda and vanilla
  2. Separate ricotta into two even amounts in separate bowls
  3. In one bowl, add matcha and mix – in the other, mix dragon fruit
  4. Using a butter knife, take a small dab of matcha and smear onto the lower left bottom corner of the toast – then switch to dragon fruit smearing next to the matcha mixture, continue to work your way to the upper right corner of the toast, on a diagonal – overlapping each color
  5. Using a hear shape cookie cutter, cut banana and place along the top of the toast (or just overlap regular slices)
  6. Add golden sprinkles if desired
