Ingredients
- 1 pound ground turkey
- 2 – 28 oz cans crushed tomatoes
- 2 cups chicken broth
- 6 tbs olive oil
- 1/2 small yellow onion
- 1 red pepper
- 1 tsp minced garlic
- 2 tsp cumin
- 1/2 tbs salt
- 1/2 tbs pepper
- 1/2 tbs greek seasoning
- 1 can kidney beans
- 1 can black beans
Optional: Mexican cheddar cheese grated mix, sour cream, avocado, tortilla strips
Steps
1. Heat olive oil at medium low temp, add garlic and cook for 3 minutes
2. Add turkey to garlic and cook (using a spatula to separate the turkey)
3. Cook turkey for about 10 minutes, breaking turkey apart often or until the pink of the turkey is all cooked
4. In separate pan, add 3 tbs olive oil, heat on medium low. Add onion and cook for 3 minutes – add peppers and cook for another 3 minutes
5. Add both cans of tomatoes, chicken broth, salt, pepper, cumin and Greek seasoning and simmer for 45 minutes
6. Add kidney and black beans and cook for another 15 minutes
7. Serve with cheese, sour cream and avocado
