Chicken w/cuke salad


  • 6 chicken tenders
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs or Panko
  • 1 cucumber
  • 1 beefsteak tomato
  • 1/2 cup Kalamata olives
  • 1/4 red onion
  • Balsamic glaze (buying pre-made from the store is much easier and cheaper!)
  • Salt and pepper to taste


  1. Chop cukes, onion, tomatoes and olives into small square pieces and mix together like a salsa – cover with 2 tbs olive oil and salt and pepper to taste
  2. Crack eggs and whisk in small bowl
  3. Pour flour and breadcrumbs on separate flat plated
  4. Take each piece of chicken and repeat the following steps on each piece: place chicken in flour and cover on each side, dip chicken into egg and cover on all sides and cover on each side with breadcrumbs
  5. Heat olive oil in large pan to medium low heat and cook chicken on each side for 5 minutes each or until each side is golden brown
  6. Place chicken on a plate, spoon cucumber mixture over chicken and drizzle balsamic over the chicken
  7. Enjoy!
