Ingredients
- 6 chicken tenders
- 1 cup flour
- 2 eggs
- 1 cup breadcrumbs or Panko
- 1 cucumber
- 1 beefsteak tomato
- 1/2 cup Kalamata olives
- 1/4 red onion
- Balsamic glaze (buying pre-made from the store is much easier and cheaper!)
- Salt and pepper to taste
Steps
- Chop cukes, onion, tomatoes and olives into small square pieces and mix together like a salsa – cover with 2 tbs olive oil and salt and pepper to taste
- Crack eggs and whisk in small bowl
- Pour flour and breadcrumbs on separate flat plated
- Take each piece of chicken and repeat the following steps on each piece: place chicken in flour and cover on each side, dip chicken into egg and cover on all sides and cover on each side with breadcrumbs
- Heat olive oil in large pan to medium low heat and cook chicken on each side for 5 minutes each or until each side is golden brown
- Place chicken on a plate, spoon cucumber mixture over chicken and drizzle balsamic over the chicken
