Healthy Chicken LoMein


  • 1 lb angel hair pasta
  • 1/2 cup shelled edamame
  • 1/2 cup shredded carrots
  • 1/2 cups sliced mushrooms
  • 1 Sliced or diced red pepper
  • 3-4 chicken tenders
  • 1/4 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 1 tsp sesame seeds
  • 1/2 cup sesame oil
  • 1/2 tbs minced garlic
  • 1/2 tbs minced ginger


  1. Fill pan with water and cook angel hair pasta according to package directions- drain and set aside
  2. Heat 1/2 of the sesame oil in a frying pan – add chicken and cook on each side for 5-7 minutes until golden brown – set aside
  3. Heat remaining sesame oil in wok or frying pan
  4. Add garlic and ginger and cook for 1 minute
  5. Add pepper, edamame, mushrooms, and carrots and cook for 10 minutes
  6. Mix in pasta and chicken- add soy sauce and teriyaki and cook for another 2 minutes
  7. Remove, place in dish and top with sesame seeds
