Ingredients
- 4 chicken thighs
- 1/2 cup bbq sauce
- 1/4 cup water
- 1 tbs apple cider vinegar
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup red onion, chopped
- 1/2 cup black beans
- 1/4 cup mozzarella cheese
- Avocado, smashed into a bowl
- 1/4 cup sour cream
- 1/2 tbs olive oil
- 1 tbs lime juice
- Leafs of Boston lettuce
Steps
- In a deep pan, add chicken, bbq sauce, water and vinegar – cover and simmer for 20 minutes
- While chicken cooks, mix chopped tomatoes, cilantro and onion together – drizzle with olive oil and add salt and pepper to taste – set aside
- Once chicken is cooked, shred the chicken apart with two forks
- Lay lettuce leafs down
- Add chicken, top with tomato salsa, black beans, smashed avocado, sour cream and cheese
- Top with a squeeze of lime juice and salt and pepper to taste if desired
