Leveled Up Chicken and Rice

Made this delicious chicken recipe. Highly reco trying it! Recipe for 2-3 people. As a note – I recommend marinating the chicken over night

Ingredients:

  • 2 chicken breast
  • 1 1/2 cup brown rice (cooked according to package)
  • 2 tbs soy sauce
  • 3/4 cup shelled edamame (can use the frozen kind and cook according to package)
  • 1 large Bouillon cube (or 3 small ones)
  • 1 1/2 cup water
  • 1/2 small yellow onion chopped
  • 2 tbs lime juice
  • Sesame seeds to garnish (optional)

(Marinade)

    1 tbs Dijon mustard
    3 tbs soy sauce
    3 tbs olive oil
    Salt and pepper
    1 tbs lime juice
    2 tbs chopped cilantro

Steps

  1. The night before you make the dish, mix the marinade in a bowl, place chicken in a plastic bag with the marinade poured over it and refrigerate (you can also make the rice the night before for a quicker meal the next day)
  2. Add 2 tbs of olive oil to a pan, bring to medium heat and cook the chicken breast on each side for five minutes each
  3. Slice each chicken into 1/2 inch slivers (the centers may be a little pink but that’s ok as you will be cooking it more) – set aside
  4. In a separate pan, add 2 tbs olive oil – sautéed onions for 3 minutes – add chicken and ensure it’s cooked all the way through – add cooked edamame
  5. Add lime juice, water and bouillon cube to the chicken and edamame, stir until the bouillon cube dissolves
  6. Add rice to mixture w/ soy sauce (warm it in a separate pan if you made the night before prior to adding)
  7. Garnish with chopped parsley or cilantro and sesame seeds (optional)
