Adaptation from Jeanine Donofrio recipe
Ingredients
- 3 sweet potatoes, sliced into fries shape
- Salt and pepper to taste
- Drizzle of olive oil
Chili
- Package of ground turkey (1 lb)
- 1/4 chopped yellow onion
- 1 tbs minced garlic
- 1 28 ounce can crushed tomatoes
- 3/4 cup chicken broth
- 1/2 can black beans
- 1/2 can corn
- 2 tsp salt 2 tsp pepper
Slaw
- 1 cup Sliced purple cabbage
- 3tbs Chopped cilantro
- Drizzle olive oil
- 1 tbs lime juice
- Salt and pepper to taste
Yogurt dressing
- 1/2 cup plain yogurt
- 1 tbs lemon juice
- salt and pepper to taste
- Drizzle of olive oil
Steps
- Set oven to 425 degrees
- In a baking dish, add sweet potatoes, drizzle with olive oil, salt and pepper – mix around – cook for 35 mins
- Add 3 tbs olive oil to a pan, add onions- cook for 3 minutes, stirring frequently. Add garlic, and mix in for 30 seconds.
- Add turkey and break apart with a large wooden spoon, mixing until all the pink meat is gone (4 mins or so)
- Add tomatoes, salt and pepper, cook for 15 mins
- Add beans, corn and broth- cook for 15 more minutes
- Add all slaw ingredients to a bowl and mix
- In a separate bowl, add all dressing ingredients to a bowl and mix.
- Remove potatoes from oven and lay on a paper towel to absorb oil
- In a bowl, layer potatoes, chili and slaw – drizzle with dressing using a spoon
- Top with sliced avocado
