Ingredients
- 1 cup Quinoa, cooked according to package
- 1/2 red bell pepper, diced
- 1 bunch of broccolini
- 1/2 cup shredded carrots
- 1 cup arugula
- 1/2 cup chick peas, drained
- 1 tbs everything but the bagel seasoning
- 1 tbs krazy Jane seasoning
- 1/2 cup olive oil
Dressing
- 1/4 cup olive oil
- 1 tbs hummus
- 1/2 tbs minced garlic
- 1/2 tbs Dijon mustard
- 2 tbs soy sauce
- 1/2 tsp lime juice
- 1/2 tsp lemon juice
Steps
- Set oven to 450 degrees
- Cut broccolini in half, set the bottom half (stem part) of the broccolini to the side
- On a baking sheet, toss the top half of the broccolini in 2 tbs of olive oil and season with salt and pepper
- On another baking sheet, add chick peas and toss with 2 tbs olive oil, krazy Jane seasoning and everything but the bagel seasoning
- Place both baking sheets in the oven – bake broccolini for 15 minutes or until broccoli is crispy (use a spatula to move the broccoli and chickpeas around midway through to avoid burning). Bake chickpeas for an additional 10 minutes or until crispy
- Set both baking sheets aside
- Chop stems of broccoli into 1/2 inch pieces
- In a frying pan, add 3 tbs olive oil and bring to medium heat. Add diced pepper, broccolini stems and carrots and sautéed (stirring often) for 10 minutes
- Mix all dressing ingredients together in a jar
- Add cooked quinoa, broccolini tips, arugula and dressing and cook for another 3 minutes
- Serve with chickpeas sprinkled on top and enjoy!
