2x Toast


  • Handful of tricolor mini tomatoes
  • 2-3 basil leaves
  • 2 tbs pesto
  • 2 slices of a medium- large mozzarella ball
  • 1 egg
  • 1/4 cup sliced mushrooms
  • 1/4 avocado sliced
  • Salt and pepper to taste
  • 2 slices multigrain toast
  • 2 tbs olive oil


  1. Add 1 tbs of olive oil to a medium / small pan- put on low heat and add mushrooms – cook for 5-7 minutes and set aside
  2. Slice tomatoes into 2-3 slices each
  3. Toast bread
  4. While bread that’s add remaining olive oil to a small pan – put on medium low heat and cook egg for 3 minutes or until whites are cooked
  5. On first piece of toast, place mozzarella slices and cover with pesto- add tomatoes and place basil even around the toast as pictured – sprinkle with salt and pepper
  6. On the second piece of toast, place your egg, add the avocado slices on the the side of the toast – place mushroom slices along the bottom of the toast, covering the bottoms of the avocado slices – sprinkle with salt and pepper
