AvoBerry Toast

  • 2 pieces of  multi-grain bread
  • 1 tbs. almond butter
  • 3 strawberries
  • 3-4 blueberries
  • 7 goji berries
  • sprinkle of granola (quinio is my fav!)
  • 1/2 avocado
  • sprinkle of sunflower seeds
  • sesame oil
  • salt to taste

Toast 1

  1. Toast bread
  2. Slather with almond butter
  3. Dice 1 strawberry and lay in a semi circle around 1/2 of the toast
  4. Add goji berries in the same semi circle shape
  5. Cut blueberries in half and repeat semi-circle display (seen in photo above)
  6. Add granola to the end
  7. Using a heart shape cookie cutter, cut the next strawberry and place at the bottom corner of the toast

Toast 2

  1. Toast bread
  2. Cut avocado in half (length wise)
  3. Spoon entire avocado half out of the shell in one piece
  4. Lay the half avocado on a cutting board (with the outside of the avocado facing up, horizontally in front of you)
  5. Starting at the right end of the avocado, slice vertical slivers across the entire avocado
  6. Using your fingers, smush avocado so the center pushes upwards
  7. Then, start to move your fingers so the avocado slices become diagonal (still in one line)
  8. Starting on the left side, start to roll the avocado line into a circle, wrapping around itself to create the flower effect
  9. Place avocado on toast
  10. Sprinkle with sesame oil, sunflower seeds and salt
  11. Add strawberry to the center
