Farro Toast


  • 1 cup cooked farro
  • 1/4 cup torn parsley
  • 1 chicken breast
  • 1/2 lemon
  • Drizzle of olive oil
  • Drizzle of balsamic
  • Drizzle of balsamic glaze
  • Salt and pepper to taste
  • 1/4 cup sliced carrots
  • 2 pieces of toast


  1. Add 1 tbs olive oil to a pan – turn to medium low heat – cook on each side for 5 minutes
  2. Lets chicken cool – shred using fingers or a fork
  3. In a bowl, mix farro, sliced carrots, chicken, and torn parsley
  4. Drizzle mixture with olive oil, balsamic and salt and pepper to taste – squeeze 1/4 lemon wedge on top
  5. Spoon mixture into two pieces of toast- top with balsamic glaze and garnish with parsley – use remaining lemon wedge for deco
  6. Enjoy!
