Cuke Chickpea Salad

Inspired by Modern Proper cucumber salad recipe with modification to dressing to simplify


  • 1 cucumber
  • 1 can chickpeas rinsed
  • 1/4 Cup torn parsley
  • 1/4 Cup torn mint
  • 1 tbs dill (pull leaves off of the bunch but don’t chop or tear)
  • 1/4 purple onion sliced fine
  • 1/4 Cup plain yogurt
  • 1 tbs zest of lemon
  • 2 tbs olive oil
  • 1/2 lemon (for juice – you can use this for the zest as well)


  1. Place dukes on a plate – spread out, overlapping slightly
  2. Top with sliced onion and chickpeas – spreading out evenly around the plate
  3. Sprinkle parsley and mint on top- evenly across the plate
  4. Place dill gently on top, spaced evenly
  5. Sprinkle lemon zest for color
  6. On side of dish – mix yogurt, lemon juice and olive oil and place in small dish – with mint for garnish
