Ingredients
- Trader Joe’s pumpkin ravioli
- 28 oz can cento San Marzano peeled tomatoes
- 1/2 tbs salt
- 1/2 tbs sugar
- 1/2 tbs pepper
- 1 cup pumpkin purée
- 1 tsp cinnamon
- 1/2 cup olive oil
- 1/2 medium yellow onion chopped finely
- 1 tbs minced garlic
Steps
- Heat olive oil in a large pan at medium low heat
- Add onion and cook for 5 minutes or until onion are nearing translucency (stir every few moments to make sure it doesn’t burn)
- Add garlic and cook for another 3 minutes or until golden brown
- Open canned tomato and pour into a bowl, crush tomatoes with your hand and add to a the onions and oil
- Add salt, pepper, sugar, purée and cinnamon and stir
- Cook sauce for 20-25 minutes
- Boil 2 cups water in a pan, add ravioli and cook for 2-3 minutes
- Add sauce to ravioli and enjoy!
